·         Materials:

5 pieces Grouper @ 60 g
1 tbsp lemon juice
1 tbsp fish sauce
1 tbsp unsaturated oil for polishing
2 tbsp unsaturated oil for saltines


·         Mashed Seasoning:

5 candlenuts
1 tbsp sliced garlic
1 slice Ginger
1 slice Turmeric
1/2 tsp pepper
1 tsp of egg-milk


·         Other Spices:

1 Rod lemongrass
10 grains of shallots, coarse slices
10 Red cayenne pepper
2 orange leaves
Little vinegar
1 tbsp granulated sugar
200 ml broth

·         How to make:

1.    coat fish with a mixture of lemon juice and fish sauce for a few minutes.
