Fresh Chicken


·         Materials:

3 tbsp cooking oil, for sauteing
1 tail (1 kg) chicken, cut, into 20 parts
750 ml hot water
2 1/2 cm ginger, thinly sliced
2 cm galangal, thinly sliced
2 rods of lemongrass, take the white part, spread
4 pieces of orange leaf, tear off the his leaf
1/2 tsp granulated sugar
6-7 vegetable fruit star, split two
3 pieces of red chili, cut into 1 cm
3 green chili peppers, cut into 1 cm


·         Mashed Spices:

8 shallots
6 cloves garlic
1 1/2 cm turmeric
2 tsp coriander
1/2 tsp cumin
1 tsp pepper granules
1 1/2 tsp salt


·         How to make:

1.    Heat a slow cooker on a high set, input cooking oil, and fine seasoning. Stir until fragrant.
2.    Put chicken, water, ginger, galangal, lemongrass, lime leaves, and sugar. Stir well.
3.    Turn the button on the set low (cook for 5 hours) or high (cook for 3 hours).
4.    Add vegetable starfruit, red chili pepper, and green chili Peppers. Close and continue cooking for 1 hour (on the high set). Turn off the slow cooker.
5.    Serve warmly.
